A web search about work arounds for this multiple clicking issue brought me here and informed me I'm not alone!
I see lot's of suggestions for a fix, but no one has posted what occurred to me, and perhaps it will be useful?
Why not use a key chord modifier to skip the extra dialogue?
What If hold a modifier key while clicking and it selects the recipe and then puts you directly back into the game closing ALL modals?
One click, done, default quality, and you are back in control of you character?
That way power users can find out about it like copy and pasting recipes between assemblers, and people who don't care wont be upset.

I got to say, it is wild that a research changes how the UI works. Is there any other research that changes something like this?
Seems like it should be very easy to have at least an option for: "Don't wait to confirm quality".
If you are planning to set a quality level, you can do that before selecting the item. If you don't care about that, you just click the item. I'm close to turning quality off with a mod just to avoid this annoyance, but that really shouldn't be solution.
Just now, I thought I might just get used to this, the but then found my splitter wasn't filtering after trying to set it twice -- apparently splitters filter for quality too! And are not set without double clicking the item. EDIT: AND AGAIN, when doing signals with a combinator. I'm pretty sure my signal 'C' cannot ever come in rare quality! This is literally a bug.
