As title; when I set a space platform request for iron plates of eg. 0-500, even if I have 1000 plates in the hub, it doesn't send the excess back to the planet (nor if I insert more plates with an inserter). I haven't seen this issue with iron ore or anything else, only iron plates.
ETA:
I've attached a save-file where I've set an upper bound of 500 iron plates in my space platform but there are still 1000 sitting there

Thanks for the report. Iron plate somehow ended up in construction requests which prevents dropping it to surface. Do you have any idea how it could happen?
To fix your issue, the platform needs to start traveling to another planet. Simply add Fulgora to your schedule, press "Go" and remove it.

iron plates on the platform requests happens when I do a ghost-item request on an assembler
removing the request from the assembler sets the platform requestt to 0, and does not remove if from the list

This works as intended. If you request anything for construction including ghost item requests, it will block landing pad from requesting the item until the platform leaves the planet. Alternatively, you can toggle construction requests off and on to clear it.
