Currently it is possible to choose any RGB color for train stops or trains but it is not easy to use any themes you'd like. There is no other way of reusing color defined by yourself than writing RGB values down and putting them by hand any time you create new train or train stop. For stops you might keep blueprints of existing ones but it is rather workaround than reasonable solution.
So what we need is option to define custom color and save it for the game. It would be fairly easy to implement and possibly it is achievable by mods. When you pick any color for train stop or train, you should have button to name it and save it. Next time when you want to use some color you should see box with saved colors. This way you can define color for stops and trains for copper ore and always use the same color each time you create new one for given purpose. Or you can create new color for trains that belong to some station. You can use it as you wish because it just adds option to enter RGB code once and never again think about the code. Just copy the damn thing.
Bonus idea: when you place new train at trains station, it could be already colored as the station. You already have detection to align train with station so it should be fairly easy to do. It's just a quirk if main proposal would be implemented but it would surely be something nice.
I have to admit I already too many times checked color code I used for trains for something just to replicate the same color for new ones. I mostly do it roughly making all of them slightly different just because I rather use roughly the same slider positions than values themselves. Some are brighter, some are more reddish etc. If you want to keep your fleet consistent, then it is pain in the ass.
Also replacing destroyed train preserves train configuration. Maybe you could also preserve train colors. Even one color would do (considering multi train builds). Each time I replace some destroyed train (well, robots should do that I think) it will use default color and I have to check what it was and which color it should be.

Well, no, there are. Shift + right click copies a colour and a name from a train stop, and shift + left click pastes them onto another stop. You can also copy and paste a colour from a train to a train stop that way.
