Bottled sulphur dioxide
Was the bottling of this overlooked, or intentional? Or am I missing where to do it? Pretty much every other gas or liquid can be bottled in some way, so I'm guessing this is an accidental omission.

There were deliberate gaps in the list of items that can be bottled. The idea is you were supposed to convert certain materials as you produce them. Such as Nitroglycerine and Sulfur Dioxide.
In the case of sulphur dioxide, it was originally only a waste product from producing Lead and Nickel, and therefore you were supposed to either vent it, or produce sulphuric acid from it directly. Sulfuric acid can be barrelled, so that satisfied the barrelling conditions.
However, the recent addition of it as a mainstream source of sulphur in the revamp map sort of breaks that idea, I just... overlooked this when I made the changes to how the oil system works.
