Currently you can only see the % when opening a rocket.

1)
Why not put it on the silo itself when ALT mode is active (like the inserter arrows). You could disable/enable this option in settings as you can do with the inserter arrows...

2)
A debug options to overlay your current rocket progress.
eg. 4 rockets
---------
* rocket1: 55%
* rocket2: 61%
* rocket3: 79%
* rocket4: 10%
---------
or
---------
rockets: 55% / 61% / 79% / 10%
---------

This way you don't have to run all the way to the rocket to know the %.
Super handy in speedruns.
