Anyone know why this is happening?
I just recently started playing. I have run into an issue where when I try to mine stone it will only spit out coil. Anyone know why this would happen? Thanks for any feed back.

You mean coal?
Could you have coal and stone in the same area? Look at the side bar when your mouse pointer is over the mining drill - it should show you what resources are under it.

Okay so I tried putting stone straight from drill to burner and it works, but whenever I try to go from drill to a belt it produces coal.

There is no coal on these patches. It says I'm suppose to get stone but spits out coal. I have tried on several different patches with the same result.

Press Alt to see where the mining drill dumps the coal. Put a belt there, and remove your inserter.
Inserters remove coal from burner mining drills, even if they aren't mining coal.

You are probably using an inserter to get stone out of a burner mining drill.
In that case the inserter won't remove the stone from the drill, instead it will remove the fuel (coal) you put inside it.
The drill has an output, marked with an arrow when you press the ALT-key. Put a chest or transport belt there and it will output stone in/onto it.
