FPS drop on macOS

After the latest updates, almost all locations started experiencing FPS drops — where it used to be a stable 50–60 FPS, it has now dropped to 25–40. It’s especially noticeable in space.

Your post does not mention the exact Version Number; the Latest Stable lags behind the Latest Experimental release. Version 2.0.45: Added Metal graphics backend for Apple devices.

Previously with M1 Device

More information about your system - or a Factorio-current.log file - is needed to give any specific advice. You can try changing the Graphics backend between OpenGL and Metal, Resolution changes, or adjusting the overall graphics settings and see if that helps.

I play Factorio on a 16" Intel Macbook Pro with a Radeon 5600m and I started experiencing the same slowness. It arose after a major MacOS update and it was inconsistent when it would arise, but switching to the Metal API eliminated it completely for me. I suspect it has something to do with Apple not maintaining their OpenGL support anymore. As it was already mentioned, try switching off the OpenGL API and see if it makes a difference.

OpenGL slowdown between 2.0.45 and 2.0.47 was unlikely to be due to Apple's changes; the Factorio Defaults changed: Previously

Again, without an attached factorio-current.log (including helpful details like your exact CPU & GPU Model, Memory MB quantities, Factorio Build number, Monitor configuration and resolutions, current graphics settings, etc), there is not much that can be given for Specific Advice. You can try adjusting these settings yourself, or try an Experimental release.
