Same, and especially for ammo. When I build something (e.g. long railway to far away) I don't care about stack size, I care if I am running out of it, so I don't have to run back to base when I was almost there. Yes, these can be moved to quickbar, but it's miles away from the focus of vision. Cases where stack size at cursor is important is only when you are puttting items inside a recipe slot or a chest, but even there it's not much of a useful info of how much would be put with shft-click or shift-right-click, or it can be shown in a form like "507 (100)"

Having something like 100 (507) would be my personal preference, but 507 (100) would work for me as well.
The important thing to me is being able to tell how large the current stack is, for the purposes of dropping that stack entirely (or half of it).

Note that it isn't showing the stack size; it's showing the amount currently in your hand. Same goes for ammo; it's the amount currently in the slot.
Granted, since the system will auto-refill in both of those cases, it still isn't as useful information as seeing how much you can actually use.
