I have verified that
- Sprite Resolution is set to High on both computers.
- Video memory usage is set to All on both computers.
- Atlas Texture Size is set to Largest Possible on both computers
- Texture Compression is set to High Quality on both computers
- Render in native screen resolution is checked on macOS
- UI scale is set to 125% on both computers
- Both computers are using the monitor in native resolution, which is 2560x1440
- Factorio logs indicate it is rendering at 2560x1440
If anything is unclear or you need more information please let me know. I'm hoping this can get fixed in 2.1.
