The log indicates that the crash happened when the audio driver tried to handle the default audio device changing. Were you doing anything with your audio device(s) when the crash happened?
At the start of the log it also shows it had trouble opening the audio device in the first place. Your audio device might be misbehaving in some way that the driver cannot handle.
In any case this is mostly out of our hands (save for updating the libraries used, which might happen for 2.1). I would suggest troubleshooting your audio device(s). Have you experienced other audio related issues (outside of Factorio)?
Moving this to Technical help as I don't see anything we could do on Factorio side.

It's a macbook I run in clamshell mode. I recently paired some airpods with another Macbook in the vicinity. It might've synced to that device, but I never changed the audio output of the device running on Factorio.
