Maybe it has been thought of before but wouldn't "Energy Output" be more appropriate ?
Like: "Power Output" and "Max Output"

Energy Capability (or Output) and Energy Usage (or Drain).

Energy <something> sounds fishy to me.
I actually had no problem understanding "performance" (Possibly caused by my location )

I didn't neither. But it's just not the right wording. That's a matter of fact and I pointed that out.
If there was plenty of typos in a text, you'd still understand it, but does that makes absolutely no difference on how the text feels ?

Well technically it is right.
Its an engine, an engine has a maximum performance it can run at and has a performance it currently runs at

Yes, but we want the power output, not the performance. When you drive a car, do you determin speed using the speedometer, or using the RPM measure ? of course you use the speedometer.

EDIT: To be more clear, when I read about a power plant, I don't care of the speed at which the turbines spin. I just want the POWER OUTPUT.
To add to this suggestion, it'd be nice if instead of a bar, we had numerical informations.

The text could be changed to output, but then the bar should also show something different as those two aren't the same.

I prefer to make calcs and see how many engines I need, than placing some, and hoping it runs fine

These "engines" that are part of a Power Plant. So performance makes less sense than Available Power vs Usage.

on a side note, i'd like some machine that would analyse the power grid and give a readout of:
output power
required power
potentiol maximum power(to account for solar)
maximum drain (to show if EVERYTHING ran at once
steam engines
Solar Panels
laser towers
labs
assemblers
ect...
