I have a rocket silo at 5.05 crafting speed. Most of the time it can launch consistently one launch after the other, but occasionally when the bots are very fast, it will reach 100% crafted of the next rocket, pause production at 100%, the current rocket will finish its animation, and then the doors...

Ahh I see, yes that makes much more sense. I think the issue is then that it's attached to research and not item availability/they aren't available by default in the editor.

It wasn't just grey, it had a message. I thought I attatched the image, perhaps I didn't. It did resolve itself after a few minutes, and I could hear the audio still playing while it showed. I did not have to kill factorio, and it wasn't the "application is not responding" type of grey

When I tried to open the game I got this screen one time. I think it has something to do with discord (maybe rich presence or overlay?) and my internet connection being poor. Uncertain how it could be replicated.
