I think I have had enough with this bug now [2.0.39]. I have placed legendary bricks or concrete or refined concrete too many times, including just now—it's not intuitive to behave one way for pipetting tiles, but another for entities.

But it lets you take the mech armor off over the lava too, while you're grounded from the demolisher. Then, you're stuck there in the lava even when the cloud is gone. I don't think you should be allowed to remove the armor, and I should be dead.

Just adding that this doesn't always reset to Nauvis. It seems to choose the first valid planet of construction. For Yumako, it resets to Gleba. For Turbo belts, Vulcanus.

Steps to reproduce:
- open a 2.0.21 world
- obtain hazard concrete (either refined or regular)
- place 4 to make a diamond shape
- copy this diamond shape and place as a ghost
- use pipette (Q) on parts of the shape (ghost or placed) with //// orientation
- press R
- use pipette (Q) on parts of the ...

Thanks for linking to that report. It is slightly different, asking to make the offending square 'not buildable'. Someone commented asking "why not just always put the cliff z-index under building?", which is what I would expect to be done, as it seems easiest.

Steps to reproduce:
- create fresh Space Age 2.0.20 world with default settings and seed 1622586804
- travel to -340 -54
- craft and place a transport belt
- remove it
- craft and place a wooden chest

Expected:
- both entities cover up the cliff tile ... graphic ... thing.

Actual:
- the transport ...

Does this upcoming fix cover my problem?

Pipetting Normal concrete / bricks from the ingredients section of an assembler, I instead get my Rare bricks (i.e. the highest available)

If that's the case, why can the engineer place quality stone bricks? I placed some Uncommon stone bricks, then when I picked them up, they were Normal stone bricks. This treatment seems inconsistent to me.

tl;dr
You can scroll the Map Editor - Tool - Entities scrollbar too far down. At a guess, the scrollbar is counting how many rows all the Entities would take up, instead of including only those in the selected category.
