Yes, you could replicate a filtered storage chest with a buffer chest requesting 0-9999 of an item, but that feels more finicky, is technologically more expensive, and disables an achievement (even if you already have the achievement, it matters when playing coop with new players!)
Granted, the functionality of copying assembler output to a buffer chest doesn't exist either. I suppose either existing would be convenient, but the storage chest feels like the more elegant solution!

You're right, it does mess that up (as well as any other buffer chests you have lying around that actually want that item).
