Currently, if you have, say, three stations named "dropoff" and decide to rename it to "copper_dropoff", it will rename one of them, change the schedules of the trains that wanted to go there... And leave two more in limbo for you to find and rename by hand.
Renaming them all from one station would be pretty bad, but I don't see why we couldn't have that functionality on the trains -> stations screen. Make it easier to decide midway through your base that you'd like resource icons on station names or something.

I found out few days ago, after years of playing factorio. that there is a short cut for that in the control settings
Advanced Interaction > Rename all (Default Control + left-click) while pressing the confirm button.
