There is a mod that does that, I can't quite recall the name currently as I'm playing unmodded.
Basically, when hovering over an entity, like say a power pole, the minimap collapses.
Why? This makes it so the entity UI beneath where the minimap is, is no longer cut off, and can be read in full. This is made worse when using the remote view, and when being on a space platform for example, because the additional information in the column of the minimap also takes up space, like Add Tag, Add Ping, Stopped at Planet X, Speed, Weight.
Without this feature, it's often impossible to tell what is on the bottom of the UI, including what may be in a roboport network, or other useful information.
I'll add two screenshots to illustrate
As you can see, with the minimap hidden, there's lots of useful information.
In the interface option, there is an option to hide the minimap. I.e., do not tick "show minimap".
I request an option to "Show minimap, but hide if hovering something" (obviously better wording).

Not sure about hiding the minimap specifically but I can't even see how much ore is under a miner when hovering it in remote view, seemingly because of the horizontal bar at the top displacing text that is there. Happens for anything hovered in remote view. Picture attached.

Correction, the UI is outside of my view even without remote view (in this case the electricity info is unviewable for what I am hovering), and in this case it seems to be my pins that have pushed it down:

No, not really... this exact idea (hiding when hovering entity) was tested during our lan party in september and almost everyone hated it to the point we did a hotfix removal of it. There are also practical use cases of not hiding minimap like seeing radar coverage when building them. Universal solution is to disable tooltip on side so it shows under the cursor, it takes some yime to get used to but it is solving a lot of issues like this.

Agree with OP that this is the problem; I suggest addition a setting to move pins to the left instead of letting them be on the right "stack". Update:
I know that option "show hovering entity info" exists, but it's not as useful as the one to the right. I would suggest leaving where it is now.

This was even a problem in 1.0
I think it would be good to change something about not seeing the tooltip in full. It's way worse on smaller resolutions/higher UI scale setting.

- autoscroll after 2 seconds delay
- add a scollbar that lets you scroll with arrow keys/page up/down
- Hide minimap as an opt-in option
- add a key that lets you pin the tooltip as long as its pressed so you can move the mouse over to scroll

+1 — I also would like an option to hide the minimap when hovering (at least if the "entity tooltip" is tall). I'd also like the list of pins to be hidden at the same time, since it could be arbitrarily tall.

I've been using this that last week. It's sometimes a bit annoying as it can hide things you want to see while hovering an entity, but it's mostly very useful and I've already gotten quite used to it. Also frees up a lot of space for pins under the minimap. Was good advice boskid! Any chance we could get a different feature? Like, how pressing alt toggles showing things like splitter priorities, recipes, etc. Can you let us a map a key to "toggle tooltip"? So for those rare cases where I want to see something down the lower right of where I'm hovering, I could quickly toggle it off and back on after. Edit: I also checked the mod I used previously. It's called "Expand Tooltip". Sadly not updated. So tooltip on cursor it is for now
