Move items from one stack to another with the scroll wheel.
The Inventory Tweaks mod for Minecraft allows you to move one item at a time from one inventory to another using the scroll wheel. If I have an assembler making electronic circuits and they're being moved into a chest and I only want one electronic circuit, I have to right click the stack in the chest, right click an empty slot in my inventory then put the leftover back into the chest. Meanwhile the assembler has activated and has made a bunch more circuits. Now you have 10 extra you don't need. So let me pull 1 off the stack into my inventory, every time my mouse wheel advances once notch.

The scroll wheel is not a bad idea, love it. And i agree with the additions from 1.5 minecraft, Being able to just click and drag, But with an auto sorted inventory that wont help much without a button to sort the inventory.

To be honest: I have no idea, why I wrote the above. It doesn't make sense... Perhaps it was written by my alter ego? That one, which likes kidding me.

It's been a while since the topic was made, but i was just instinctively trying if i could use mousewheel for that today like i do in Minecraft. But sadly it's not in Factorio, yet anyway.
So simply put; when any container inventory is open (including a turret UI) and you mouseover an item stack, you could use mousewheel to insert or take items 1 at the time. The insertion method is same as ctrl-clicking item stack, but it wouldn't just send the whole stack at once.
I'm 100% sure it wouldn't interfere with zooming feature at least, but you can make it optional in the options menu if want.
