I don't know about servers, but I played a long-term coop MP game with some friends, back in May. At first we tried and tried, but we could not get port forwarding to work. Or something. At least we could not all connect to each other.
Then we tried using Evolve. And that caused **** to just work. Ultra simple, and very stable.
I don't know if you can use Evolve to help you set up or run a server, but if you don't actually need the server thing, but just want to play coop MP, then you should give Evolve a try.
