we offer 150+ server at the moment on linux.. so i would recommend this
since linux has the better memory and harddisk system

Id say both are equally stable regarding Factorio.
Regarding the OS, a Console-Only Linux almost never crashes. But Windows-Crashes have also become rare.
As for "whats better", clearly Linux. Automation of Servers is easier and the Network Management is better.
We stopped setting up Windows Servers almost completely (many Indie-Games on Steam only allow Windows Servers, some of them are even good, but its just too much effort to keep those servers up to date and running)
