Would anybody happen to know where I can find the changelog for the most recent update that has been pushed through on Steam; going from Version 1.0.0 (stable) to Version 1.1.19 (stable) on the 27th Jan 2021?
I know that there are plenty of changelogs from each experimental version but I have yet to see anything published about the most recent stable push....

1.1.9 was released as an experimental version initially and only later marked as stable. It includes all the changes done from 1.1.1 to 1.1.9. So the changelog you saw is the correct one.

Start up Factorio and go to
About → Changelog
Select Version "1.1", Sub-version "All" (is selected by default for me)
and you will see an accumulated changelog that lists all changes since 1.0.0
If you want a quick overview, it might be easiest to check the first three categories:
"Major features", "Features", "Minor features", and if you feel like reading a tiny bit more maybe "Changes"
