As a guess, I would say because that leaves friday to fix any game-breaking issues and gives the devs the chance to enjoy an occasional normal weekend 
I don't have OCD, I have CDO. It's the same, but with the letters in the correct order.

Well, think about it: if they release Thursday, they have another day after to check before the weekend if everything is working correctly, and I guess it's much better to have Friday for possible hotfixes and such.
