I could not give any details about what happened when the crash occured. The game was just idling in the background when it happened.
I went to look at the log to see what went on and found that the game crashed and attempted to make a stacktrace, however it apparently got stuck and kept adding the same line to the stacktrace. It had kept filling the log file until it reached about 24000 lines.

Thanks for the report. Based off the log file it looks like every single thread which the process owned crashed. I've never seen that before in Factorio.
That, combined with the fact it failed to symbolize any of the stack traces and the fact you're using Linux (mint) makes me think the issue is outside of Factorio and related to your OS configuration. However, I'll leave that to Oxyd to decide.

To me that looks like it crashed for some reason, and then crashed again during some part of handling the crash, which lead to another crash in the same part, and so on.
Unfortunately, I can't tell anything else beyond that. Could you install the binutils package (which should provide the addr2line program) on your system, though? If you have it installed, then it should provide a better stacktrace the next time it crashes, if it does crash again. If it does, then definitely let us know.
