When I opened the game the loading bar was pink and the logo was missing: I didn't change any mod configurations and this has never happened before.

No. When I started the game the next day the graphics were normal again.

I don't know how much my input will help but I have had this problem as well. A few times actually. The graphics are fine after it finishes loading for me and only happens rarely. I believe I caused it to happen by alt+tabing during the loading process. I cannot give a specific timing for this, though. the only reason I saw it was because I was repeatedly restarting the game trying to find a bug in a mod I was writing and would alt+tab while it was loading
