Open GUI on entity interaction?

My idea sources from when you click on an inserter(Or allot of other entities) it brings up a GUI showing a preview of this item, is it possible to have this action open a custom GUI, I can't seem to find any events that might be related to this action.

It might be worth looking at SmartTrains, this mod opens a GUI when you click a train.
