Looking at your video it seems that the slowdowns are occurring when you are in vicinity of capacitors. that should be less than ~2mb of data :) storing numbers is quite easy and efficient. About 140KB for each product. Multiply this with the number of vanilla products and you are already on 20MB. Then add all those new items from other mods and the amount isn't so small as it seemed in the beginning...

How are these averages production values calculated? I hope you are not calculating average for longer period from multiple average values for shorter periods?
