This would give a nice flexible way to work with mods and quality specifically. So that doing quality on a planet is much easier to manage iso building a boring big ship and collect asteroids.

The best solution, get a tank, get green ammo shoot them in the tail. That solves your immediate needs.

The demolisher fight is 100% fine. Factorio isn't a classic combat orientated game. It's an automation game, and you win if you understand how to automate everything - including combat. There are multiple ways to kill a Demolisher, and turrets are not the best option.
Killing it with 20 turrets requires either uranium ammo or multiple damage and speed upgrades. If you have those, you can also kill it with a tank.
