An additional piece of context for this, just in case it's relevant. On PC I use a Colemak keyboard and therefore Colemak keybindings. I can't imagine why that would affect this situation, but let me know if there's another file I should upload with that in mind.

I play the game frequently switching between my desktop windows pc (Windows 11 25H2) and my Steam Deck. A few weeks ago, I took on the Lazy Bastard achievement and unbound the craft keybinds to avoid accidentally crafting things.
