For CPU and GPU temps monitoring with power consumption, you need a separate tool. I don't use Windows so can't reliably recommend any favourite.

Just completed a 3.5 hour session with my brother, zero issues. But will keep this posted for any issues that crop up in the future.

Been playing multi-player for almost 2 hours now. So far no issues. I turned off the debugging tools that showed "x" time until auto save and my FPS counter within the game. Keep in mind, the debugging screen does say, may cause game issues and performance issues, in bold red text.

850W PSU is a borderline minimum for your Sapphire RX 9070 XT, according to specs.
Make sure to do full load test with Furmark and prime95 running simultaneously.

Good to hear all tests returned as a pass.
But still, you mentioned hard hangs and/or reboots while gaming, so that's not good. Could be a GPU still, despite Furmark passing. Or GPU driver - that's a software side, Windows 11 or Radeon driver, or both.
Things to try:
1. Reset all GPU driver ...

Ran Prime95 test for a couple hours. Zero issues with RAM or CPU. Not sure if running it for half a day would prove anything one way or another. So at this point, not looking like a hardware issue. Might be the latest Windows 11 update, but unsure about that.

Ran the FurMark GPU test for about 45 minutes, no issues with that. Doing the Prime95 CPU RAM test now.

Still running with 4 sticks of RAM just to be sure that its not a full on stability issue.

At least at the moment, the Windows test completed with no errors found with the RAM. Doing a CPU web browser based stress test at the moment. Nearly 15 minutes in and CPU is running at around 172⁰F.

Running the memtest in the Windows Run, mdsched.exe. The stress tests you all shared, need to get flash drives accord to their own instructions, so those will have to wait until I get new drives to do it.

Do any of the web browser based tests do much or are those more limited in their scope vs ...
