Neither new nor old system is very realistic for lots of reasons, and one can hardly say that one is realistic over other.

The way I see it is as a trade off.

Old System
Pros:
Interesting behavior at lower scales
Throughput feels more grounded
There's more of a puzzle challenge with the current system
Cons:
Nonperformative
Leads to a lot of awkward building considerations like needing to use absurd amounts ...

As much as I love granularity, considering the cost to doing fluids more realistically, and the fact the current system is so squirrely and unintuitive, this is definitely for the best.
