My resolution is 1920x1080 and fullscreen. I tried changing it to windowed mode and changing the window dimensions but the preview still blocks the settings from being changed.

Running into the same issues. This seems to be a change in how scaling is handled. Here is a screenshot with 75% scaling and a resolution of 1440x900 Image

This may be Mac specific (at least from my experience).

Changing the scaling multiplier in the interface to 75% and increasing resolution to 2560x1600 allows the interface to show but it is so small it becomes near unusable (even on a 27" monitor) Image

Same issue -
1920x1080 resolution
UI Scaling Auto 100% - Map covers Settings panel. Labels for Settings are visible but only the smallest portion of the left most sliders are visible. Enemy, Advanced, and Seed elements are completely obstructed.

UI Scaling 75% - UI Elements reduced in size. Horizontal limit of map expanded. Functionally the same level of access to tabs, sliders and buttons.

UI Scaling 125%+ - UI elements in the settings panel scale up but the map horizontal remains the same as 100% UI scaling. Less functionality available than 100%.

Is not present prior to v0.17.3.

Same issue here, 1920x1080. Was working correctly before this version (at least 0.17.1, not sure if I tried it on 0.17.2)
