If I hold an item ghost while crafting that item, the counter on the quickbar will update. However, the item in my hand will not change from ghost to real.

You have "Pick ghost item if no items are available" active, right?

If so, this is intended behavior, the cursor will not change back unless you explicitly want to. This is to avoid situations where you unexpectedly start building real items just because a craft finished or some robots brought you that item.
