I am wondering, is there any reason to have more than 2 lanes for the trains?

If youre building a so called "Megabase", you might get to a point where the throughput on 2 lanes isnt sufficient anymore. Some of the really big bases use 8 or even 16 lanes in the busiest areas.
So yes, the reason is just throughput (if needed).

Actually, In my current "Towns"-like game where every product is made in a remote locataion, I have a LOT of trains. I found early on that my main rail line was simply not sufficient as two lanes. I am currently at 4 lanes and considering more.
My inside lane is a bypass. It takes trains from the most remote locations all the way across the map. My outside lanes are shorter paths to stuff "around the corner". It still has some issues as there are no bridges and such but it keeps my local traffic and commuter traffic separate mostly.
Signals on the bypass are spaced further out and Further from junctions to give trains on the bypass priority over crossing trains.
This is pretty close...
