Hi,

I'm new to the game and don't know if it's built into the game through research or not, but I'd love to have longer underground tunnels, perhaps something that is configurable through some sort of config file that would allow me to build longer underground transport tunnels.

If this already exists please point me in it's direction as I've failed to find it during searches.

Try to find UpGrade mod. It has no configuration but adds 2 longer tiers of transport belts.
Sadly due to it's name it's hard to find. Might be easier to grab it from one of modpacks.

Also there is viewtopic.php?f=93&t=18611 should still work. There are a few underground ones that do +30 and then some compiled mods that do 30+50
