Few Beginner Questions

Hello there. Really enjoying the game, but had a few basic questions.
1) When you are placing something down and your mouse pointer is that thing you are placing, is there a quicker way to abort placing things without going into your inventory to place the item or placing it on your hotbar?
2) When you have a row of structures and you want to click on each one to change them, I currently have to click on one, Escape, click on the next, Escape, etc. Is there a way where I can just click from one to the next?
3) Unless I'm missing something, there doesn't seem to be any penalty for destroying things, apart from the time it takes. Is that right? Or am I missing something?

1. press Q and holding item will return into inventory
2. just click on next one, and window will change automatically
3. no penalty, mined items are placed in inventory

Re, question 2. I don't think I'm explaining myself very well. Take a look at the below image. I click on one of the turrets, put in ammo, then want to click on another turret and put in some ammo. I can't do this. I have to escape first, then click. Hope that makes more sense.

Manual operations are indeed not always the most user friendly. The easiest way to do what you're trying to is : Take a stack of bullets, and Shift-Right-click on each turret. It will add half a stack in each, and if you have less of a stack left, you'll add half of what you have left in hand.
[Edit] OR you can plop a wooden box, align your turrets, add your bullets in the box, add a few inserters + a power pole (or just burner inserters + some coal in a second chest if you don't have electricity yet), a few belts, and you're done : automated turrets.

This is probably the best method. There are several different ways similar to this to take out item or out items into something.
You can do half stacks, or full stacks, both with taking things out or putting them in without even opening the inventory of the object. I believe doing a full stack is just Shift-Left Click. To pull stuff out o believe it is Ctrl rather than Shift and then left or right clicking depending on if you want half or full stack.
