Ore transport - double red to double blue throughput

I recently went from red to blue belts for the first time and I must say im disappointed. I usually go with double red belt with 10 fast inserters feeding each of them (5 per side 20 in total). Another pair didnt really change anything so i decided to go with blue belt but after adding yet another pair to each it stopped feeding the belt again. Would it be better to go another double red instead upgrading to blue?

If you want really densly packed belt then use two separate belts of same type and merge them with splitter.
Inserters are not capable of getting to best density - splitters can.
This might change with 0.12 but some testing will be required

I do it like this:

First set is old one from red belt. I added 2nd set when i upgraded to blue but the red set just turned off with no room to place ore. You mean i should have 4 belts merging into 2 instead so many inserters at one?

Yes - that was the way I found out to get densely packed belts on furnace output. To pull out the ore on two separate belts and then merge those two belts into one to get proper density.
