It would be cool if you could set display panels text to show a certain value from a circuit signal.

That way you could hook it up to a chest, set the text to always show, and then have it show e.g. how many iron plates you have in the chest.
Then you can easily see how many of a certain item you have in a series of connected chests.

Yeah to be able the kind of things you can do with a configurable alarm, but without the alarm notification. I like it!

Yeah exactly. https://mods.factorio.com/mod/holographic_signs can do this, but would be sick to have in the base game as well, when they already added the display panels i think
