When I'm trying to manually send things down to surface, my hub has things going in and out by inserters interacting with storage. When I'm trying to pick a specific entity in the platform storage, everything is shuffling around and if I shift+LMB something wrong, it is immediately sent down the drop pod without me having a chance to cancel it.

Please stop the autosort.

Good catch. This is an objective issue. The space logistics in general are poorly done.

I agree that it would be good to be able to confirm manual de-orbiting. Perhaps it might also be good to be able to put in standing de-orbit requests / change them with circuit network.
I believe the auto-sort is for performance reasons though: instead of having to iterate through all slot, inserters can use a dictionary.

This has bitten me a few times too. A "confirm" button before sending down items would fix the issue.

This is definitely is a guilty pleasure (manual sending). I would recommend just using a temporary logic group for what you want to send.
As mentioned, turning off auto-sort would be HORRIBLE. Once you start building spaceships that have 1000k's worth of space and items flowing constantly, manually doing cargo drops becomes meaningless.

a tip is to use the logistic interface on the middle and put the item you want to maximum 0 but I agree the manual drop is annoying with the autosort feature.
