Right-handed because then there's more space for power poles and lights for the inside.

I did left-handed because most of the rail network in France is, but we drive on the right so it ofen get confusing

My trains drive on the right... though I kinda wish I could place the signals inside the tracks since it would eliminate so much up/down movement of my character when placing the outside ones. Of course, when personal roboports are researched, I just plonk down a blueprint with tracks, power poles, signals, & lights, so it doesn't matter!
Driving on the right is the status quo in my country, and just easier for me to visualize the turn-ins to stations, etc.

I originally used the right-side variant without even giving it much thought, due to that being my country's convention on the road. But at one point I discovered that my T-junctions could be more compact and have all the proper chain and normal signal placements if I did left-side driving instead, so I switched. I'll have to check again next time I'm laying down tracks, because maybe I was just misunderstanding something, but I definitely recall being severely frustrated by not being able to place signals in certain small triangular areas amongst the criss-crossing tracks when using the right-side driving direction.

I was using right hand offline and left hand in a multiplayer game. And found the same thing. The t-junction for left hand drive is just slightly more compact and signal placement slightly better. Since t-junction is the core of most rail networks seems worth the switch.
Also i kinda like using lights + signals next to each other to git a little colored light affect at night:
