Well, if you think you have time to spare, you might try Angel-Bob's mods. Those can take you off the deep end (into the land of Seablock).
Krastorio 2 has an odd change of pace to it, it felt like it required less stuff but it was harder to get it.
Hear Earendel is trying to port Space Exploration to 2.x. I have mixed feelings about it, I feel like they made it a bit too slow but at the same time I adore what they did with power production, where you have 40 hours to put together an umbrella or learn what consequences feel like.
I'd also recommend Nullius, the only reason why it isn't first is because it's on 1.x Factorio. But it was the best thing I'd played in a long time, I miss 75 ips of grass packed 5 items deep.
