Save for 3 platforms, 1 of which stays over Nauvis, the other 2 destroyed over Vulcanus due to poor design, I manufacture all my platforms over Vulcanus.

The secret is to have multiple rocket silos ready to go. I send up a stack of gun turrets, inserters, repair packs, and several hundred yellow ammo, and eventually stacks of belts. Every platform starter pack comes with 60 or so space platform pieces, so you can make a small outcrop right away to put at least 1 gun. From there you basically babysit it, moving gun turrets and putting down belts to deliver ammo until the platform base is complete.

From there I set up ammo production so I can deliver other supplies faster and get everything set.

Its not as easy-going as building over Nauvis, but once you get the rhythm down you'll enjoy it.

On the topic:
I think it is a good challenge to have places where rocket building is harder.

If you want to build platforms with enough time you can alwas do it on Nauvis and move them to the planet you need.
That is actually what I do.
