Optic Apocalypse - Have 1000 fully powered active laser turrets.
Solaris - Fully meet your factory's power needs with solar panels/accumulators only (probably should have a minimum power requirement)
Close Definitely Counts - Kill 100 biters with grenades.
Promontory Point - Have a head on collision between two trains.
Backwards Compatible - Have Express Transport Belt placed on a Basic Transport Belt
Backwash - Have two fluid types in a single storage tank.

Hack N' Slash - Kill a spawner with an axe/iron stick.
Time Keeper - Set up a "clock" using combinators.
and maybe an achievement for using mods.

"The Necessary Thing" - As a reference to Robert Sheckley's sci fi story about a replicator replicating itself.
Maybe it could be an achievement for making a factory making factories.

As mentioned by others, I'm throwing my vote in for:
  • killing rocks
  • killing trees with guns
  • making a ridiculous amount of intermediates and just storing them in the loginet, like a few million green circuits
Overall though I absolutely abhor achievements. I understand that the younger crowd likes them, but back in my day we made our own achievements and we loved it.

Pyro: Burn 20 trees down with a flamethrower
Clean Energy: Create a large energy network completely reliant on solar power and accumulators
Mass-Extinction: KIll 200 nests on a single save.
Evolutionist: Have the evolution factor reach 1.
Terrorist: Kill 500 biters and 50 biter nests through the use of explosives, or by hitting them with trains.
Endgame: Launch a rocket from the rocket silo
Completionist: Complete all of the other achievements, including milestones

Beginning
Hard labor: Harvest 100 resources with an axe or your hand.
Electricity: Create your first functional electric grid
Meet your neighbors: Survive your first attack from the enemy without losing anything.
Scientist: Finish your first research project

Endgame
Advanced: Complete all of the research in the game, including research from any mods you may have.
Addicted: Reach 100 hours of playtime in a single save
Picking the land clean: Deplete 1000 tiles of resources
True soldier: Kill 50 behemoth biters/spitters

funny one:
are you paying any attention?
- connect the right liquids to the chemical plant
- but on the wrong connection points

water on the gas slot and gas on the water slot
- took me 30 minutes to see the mistake + 30 minutes of facepalming

Hope some hardcore achievs too :)

Send 100 rockets
Kill 10 milions aliens
Kill 10k behemots

Would keep me going :) I like the achievs in Europa Universalis IV, there are some who only few pplz in the world made them, would be good to have some here too and under some circumstances only ofc for us hardcore players :)

I think you can add further replayability by challenge achievements that require you to dedicate a full playtrough to get them, and that force you to play completely different. The "almost-no-handcrafting" achievement (Lazy bastard) is an example.

Further ideas:
Launch the rocket, and at any given time let there be four or more spaces between each two assemblers/chemical plants/rafineries (more than long handed inserter reach, so no compact designs possible)
Launch the rocket with only ever using wood as fuel (in burner inserters, furnances, and trains; complicates early game and forces woodchopping)
Launch the rocket in a game without building more than 20 (or so) assemblers (lots of micro-management, and building the intermediates one after another)

For such challenges it would be appropriate that you can choose them at the start of the game, and whilst in this "challenge mode", breaking the challenge is impossible until you specifically opt out of the challenge (for my examples: build assemblers too close together, put coal in a burner entity or build your 21st assembler). Because it would SUCK to miss the game if you accidentally click on a 21st assembler. The "no hand-crafting" challenge would go into the same category.
