I've lost Nickel ore for some reason. Mine Galena and only get Galena.

Sounds like you are playing with Bob's Ores mod.

You need to install Bob's Config mod - In the zip file is a config.lua file in which you can specifiy, if nickel and galena should be mixed.
I guess your configurations has been overwritten.
