Sometimes will end up with a traffic jam and start getting errors along the ling of "Delivery from "A" to "B" running for 18059 ticks removed after time out"

I assume a schedualed train has been cancelled.

Until the traffic jam setup is fixed, I would prefer to not be cancelling the scheduals. Is there a way to stop the automatic cancelling?

There's a mod setting, where you can increase timeouts or even switch it off.

Another setting is to disable the dispatcher to stop new deliveries. It has to be enabled later, to enable LTN again.

Thanks for that. I see how you can increase the time before timeout but, how do you turn them off?

You can only disable stop timeout.
Delivery timeout can't be disabled as it prevents old deliveries piling up in memory.

While fixing gridlocks turn off LTN by unchecking Enable Dispatcher.

If gridlocks are so frequent you have to accommodate for them in delivery timeout you really should read into junction design threads.
