Where can I find resources on railway design patterns?

What's so special or problematic about that? Dual track in mostly straight lines and then branch off to stations when needed

If the track between the ore patches is prone to traffic jams, use only chain signals so no train can stop there.

Great question. I want to lay tracks with intention and foresight, and not naively lay tracks that branch off each other without considering aesthetics and how it may affect the future.

The future thing we can maybe help you with, but aesthetics could mean pretty much anything, so you're going to have to decide for yourself. A good place to start would be the rail setups forum. I personally use a tree-style rail system with fast-right roundabout intersections.
