Shift+RMB applies to the stack in the inventory slot under your cursor, not to the items on your cursor, and it splits the stack in half, it doesn't insert just one. With a stack on your cursor, a single right click on an inventory slot will move one item from your cursor to that slot. However there doesn't seem to be any hotkey to do what OP is requesting, which, if I understand, is to take one item from your cursor and put it directly into an entity (without opening the entity inventory). I found this thread searching for a way to do that as well, and I can't find it. Unless someone can correct me on this?

Right-click inserts one item from hand to moused over slot at a time iirc (use it pretty often myself).

There is a button for that purpose: y
It drops one item on the floor or into a machine

Default key is 'Q', it's the "drop item". On a machine/turret/smelter, it inserts 1 item from the stack one has in dand.

I thought Q was the picker key?

Actually, I reckon I can't remember what is the default drop key, since I have bound that to something more convenient (mouse button).

Surprisingly had time to load up the game today.

"Z" I'm pretty sure is the default for dropping one item from cursor. I'm 99.999% sure I haven't rebound that. And yes, this works to drop it into a chest or similar without having to open the gui for it.
