I couldn't find any numbers in-game on how often asteroids spawn (it *seems* like this differs per type, too? I haven't actually counted though), are there any known numbers on that? (I would assume the most sensible measurement might be "asteroids per tick per tile of cross-sectional area"?)

it'd be a shame if this isn't known, because going for a certain amount of SPM just based off of vibes (instead of being able to calculate it) feels a bit strange for a game like factorio, in my opinion

you can access some of the curves for frequency for asteroid spawn in the factoriopedia, accessible by alt clicking any tile and then searching for asteroid, to find the "routes" pages which is not super easy to find if you don't know it's there :
You could also measure it with combinators and reading the asteroid collectors content to make sure those curves are correct

So uhm. What is m in the y axis?

I thought meter or minute, but I can't really use that to figure out how many rockets would I need per minute.
